Edamole Dip

Food Processor or Blender

YIELD: 5 servings


1 cup frozen Edamame, shelled and thawed

1 small Hass Avocado, peeled

½ red onion, diced

1 clove Garlic, minced

1 Lime, juiced

1 Plum Tomato, diced

2 tbsp. Water

2 tbsp. Cilantro, chopped

1 tsp. ground Cumin

Salt and pepper to taste


Place the edamame, avocado, and water into a food processor.  Pulse until smooth.

Transfer mixture into a mixing bowl and add onion, garlic, lime, tomato, cilantro, and cumin.

Season with salt and pepper.

Great with chips!
